SHL Lunch Series


You are cordially invited to join us for the School of Hospitality Leadership Luncheon Series!

Service is dine-in only - Darden Dining Room (Rivers Building). No take-out service.

We are unable to accommodate allergies. Beef may be cooked to medium, with a little pink.

The cost of each luncheon is $12.00 per person. Lunch begins promptly at noon and ends at 1pm.

Roasted Asparagus (Asparagus with Prosciutto and Cream Cheese)
Pork Roulade, Roasted Potatoes, Waldorf Salad (Pork loin stuffed with spinach and Sausage, drizzled with Roasted garlic Gravy, served with Roasted potatoes and Waldorf salad full of Crisp apples, cranberries, walnuts and tender butter lettuce)
Apple Crisp with Whipped Cream (Apples baked in cinnamon sugar, topped withan oatmeal crisp and homemade whipped cream)

Mar 15 - Alice in Wonderland
Alice’s Magical Trip (Mushrooms stuffed with cream cheese, sausage and peppers)
Mock Turtle Soup (Beef Tips gently simmered with peas and green beans served on fluffy mashed potatoes
Impossible Things “Eat Me” (Buttery Earl Grey Shortbread cookies served with Hot Tea)

Mar 22 - Moana
Pineapple Bites (Chunks of bacon wrapped pineapple on top of lettuce leaf with toasted Macadamia nuts, Avocado)
Baked Mahi and Sweet Potatoes (Baked Mahi, pineapple salsa, and purple & orange sweet potatoes)
Sticky Coconut Rice and Fresh Mango (Rice simmered in sweetened coconut milk, served with slices of fresh mango sprinkled with toasted coconut)

Mar 29 - Pirate Game Day
Pass the Wings (Fried wings tossed in mouth tingling hotsauce cooled with carrots, celery homemade blue cheese ranch dressing)
Slide in fora Home Run (Three sliders, pulled pork,bison, and beef served with house cut French fries)
You’re Out (The end of the game victory celebration,Oreo stuffed chocolate chip cookie drizzled with chocolate sauce!)

Apr 5 - Lassisez les bon temps roullez
Mardi Gras Eggs (Stuffed with Creole shrimp)
Jambalaya (Andouille sausage, crawfish and ricesimmered in a spicy tomato broth)
Beignets (Golden fried French style donut dusted withpowdered sugar)

Apr 12 - Korea
Spicy Sweet Chicken Wings (Fried chicken wings glazed in a sweet andspicy sesame sauce, topped with crunchy sesame seeds)
Bulgogi (Thinly sliced beef marinated in atraditional Korean seasonings, stir fried and served with white rice, sesamegreen beans and quick Kimchi)
Fresh Fruit Cream (Frozen sweetened milkcream and red bean paste topped with fresh fruit)


Seating arrangements are six persons per table. If you wish to be seated with other guests who purchased tickets separately, please send an e-mail to Penny Prichard (prichardp@ecu.edu) a minimum of one week prior to the lunch and we will try our best to accommodate you.
