Jessica King Memorial Scholarship in Occupational Therapy Fund

Jessica King was a second year graduate student in the Occupational Therapy Program with a keen interest in older adults. A friend to all her classmates and faculty members, it was a loss to everyone when Jessica passed away suddenly on August 29, 2005 at the age of 26. In order to carry on her wish to improve the lives of older adults, friends, family, and faculty members have worked with Jessica’s mother, Linda King, and Jessica’s sister, Jennifer, to establish a scholarship fund.

The fund will provide scholarship support for students enrolled in the Department of Occupational Therapy at East Carolina and who are pursuing occupational therapy careers in gerontology.

Megan Lucas, Recipient of the Jessica King Memorial Scholarship

Megan Lucas has been selected to receive the Jessica King Memorial Scholarship for the 2008-2009 academic year. She is a second year graduate student in the Department of Occupational Therapy.

In her application, Megan spoke to her desire to work with older adults first because of her strong relationship with her own grandparents. She also likes interaction with older adults because of their ability to understand how occupational therapy can impact their lives. She described her previous experiences with older adults being rewarding, as she listened to unique stories of their lives.

The Department is proud of Megan and all the other students who applied for the scholarship!

You can contribute to the fund by:

*Purchasing a cookbook called Recipes with Love, in Memory of Jessica King. At the bottom of this page is one of Jessica’s favorite recipes, Peanut Butter Pie. The cookbook is a collection from the friends and family of Jessica King and includes 190 pages of recipes with an index and table of contents. Each cookbook is $12.00 and $3.00 for shipping. The website has a lengthy list of companies that will contribute from 1-12% of their sales to the Jessica King Scholarship Fund. Look for your favorite stores and buy through the website while contributing to the fund. Stores include Walmart, Target, Avon, Zales, Barnes and Noble, etc.

Jessica’s Famous Peanut Butter Pie

1 (8 oz) package cream cheese

1 cup milk

2 cups powdered sugar

2/3 cup crunchy peanut butter

2 (9 oz.) containers cool whip

chocolate syrup

cocktail peanuts, finely chopped

3 graham cracker crusts

Combine first 5 ingredients. Beat well with an electric mixer. Pour into pie crusts. Drizzle with chocolate syrup. Sprinkle with nuts. Freeze.
